Simple and Delicious


Every once in awhile I get the urge to just eat a ton of veggies for dinner and call it a night. Tonight was definitely one of those nights. The hubby and I roasted some sliced sweet potatoes that had been tossed in a little bit of olive oil, cinnamon and cajun seasoning. We also quickly steamed a ton of broccoli to go along with it. It was such a nutritious and filling meal. When we finished gorging ourselves on veggies, we split an orange and then snuggled up on the couch perfectly contented. I am pretty sure that we both hit our quota for fruits and veggies today just in this one meal. That deserves a little woot woot! (You had no idea that someone could possibly be this excited about veggies did you?)
