So another night and another dinner. I chose to stick with something that is a frequent visitor to our dinner plates. I know that this will always be a crowd pleaser...well at least 9 times out of 10.
(Stacy has posted a very similar recipe in the past but unless you have been reading her blog from the beginning, you may have missed it. This one is so good though that it definitely bears repeating. Mel, Stacy and I all make our own versions of this recipe quite regularly.)
1 box of whole wheat rotini noodles
1 lb.ground turkey
1 large container cottage cheese
1 egg (optional)
1 jar of pasta sauce
1 cup Italian blend cheese to sprinkle on top
Cook the noodles according to the directions on the package. Saute the ground turkey. I like to mix some spices (i.e. basil, oregano, garlic, etc...) into the turkey while it cooks. Mix the egg into the cottage cheese. Then, layer the ingredients in the following order: noodles, meat, 1/2 the pasta sauce, cottage cheese mix, noodles, the other 1/2 of the pasta sauce and then top it off with the cheese.
Bake at 375 degrees for about 30 minutes. You can lower the temp and allow it to bake longer (1-2 hours) if you want to do the whole slow cooking thing. In my case, the husband chose to skip the gym (again) and so his only job was to turn on the oven 30 minutes before dinner time. When I arrived home at 7:30, (a rare "early" night for me) dinner was pipping hot and ready to come out of the oven. As soon as showers, baths and the normal evening stuff was taken care of, dinner was served!
Malia and Ava (my daughters) each ate two servings. (Ava has already decided that she will be having the leftovers for lunch today!) Unfortunately, my husband decided to forgo dinner for a box of girl scout cookies. (YES, an entire box of Samoas!!!) Oh well, you can't win them all.
