May Recipe Challenge…..Strawberries! (Mel)

When I begin to think about all the delicious things that I could make with strawberries, I think of the usual recipes…strawberry shortcake, strawberry pie, smoothies, spinach and strawberry salad, etc. (Maybe some of those aren’t necessarily the first thing that comes to mind, but that is just how it is for me.) However, for some reason during that whole thought process, all I wanted was something with lemon. So I decided that I like strawberries and I like lemon, so why not combine them both! I mean strawberry lemonade is a hit! So that is just what I did.


Vegan Lemon Cake with Cream Cheese Icing and Fresh Strawberries

This was featured at coffee club a few weeks ago and received rave reviews from all of the Triple Threat ladies. If you want to give it a try here is what you do:

For the cake you will need:

2 cups soy milk
2 teaspoons apple cider vinegar
2 1/2 cups all-purpose flour
1/4 cup cornstarch
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2/3 cup canola oil
¾ cup agave or honey
1 tablespoon vanilla extract
1/4 teaspoon almond extract
3 teaspoons fresh lemon juice
2 tablespoons finely grated lemon zest

Preheat your oven to 350 degrees. Begin by combining the soymilk and apple cider vinegar. Whisk together, until it looks as if it will curdle. Next add oil, agave or honey, vanilla, almond, and lemon juice to the soymilk mixture.

In a separate bowl sift together all the dry ingredients.

Mix the wet and dry ingredients together leaving little to no lumps. Lastly mix in your lemon zest and pour the batter into your pan. Place the cake in the oven and allow to bake for 30 minutes.While your cake is baking you can mix up the frosting.

Simply combine:

· Cream Cheese or Vegan Cream Cheese alternative
· Vanilla
· Agave

Mix until you reach desired consistency and adding vanilla and agave to taste. Then set the icing aside in the fridge until you are ready to assemble your cake. When the cake is finished and has been allowed to cool, assemble with the icing and fresh strawberries.  You can be as creative and decorative as you like or you can just make a hug pile of cake icing and strawberries and dig in! Make won't regret it!
